    boneless skinless chicken breasts

    Panko breadcrumbs
  • 1/2 cup
    Parmesan cheese, grated

    Italian seasoning
  • 1 cup

    Pasta sauce
  • 1/2 cup
    Mozzarella cheese, shredded
  • 1/4 cup
    Parmesan Cheese, grated
  • 1 tbs
    Olive oil
  • 16oz
    Angel Hair pasta

Method

  1. Preheat oven to 450 degrees F.
  2. Place chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound chicken with a meat mallet to a 1/2-inch thickness.
  3. Beat eggs with water in a shallow bowl and set aside.
  4. Mix breadcrumbs, 1/2 cup Parmesan cheese and Italian seasoning in a separate bowl, set aside.
  5. Dip chicken breast in beaten egg mixture. Transfer breast to breadcrumb mixture, pressing the crumbs into both sides. Repeat for each breast
  6. Heat 1 cup olive oil in a large skillet on medium-high heat until it begins to shimmer. Cook chicken until golden, about 2 minutes on each side. The chicken will finish cooking in the oven.
  7. Place chicken in a baking dish and top each breast with 1/4 cup of pasta sauce. Top with mozzarella and parmesan cheese.
  8. Bake in the preheated oven for 15-20 minutes until cheese is browned and bubbly and the internal temperature reads 165 degrees.
  9. Cook angel hair pasta according to package directions.
  10. Serve chicken with pasta and remaining sauce, plus your favorite bread and side salad.
